Chenin Blanc

Planted in 1944 at a site just north of the city of Ten Thousand Buddhas sits this exceptional Chenin Blanc vineyard. Dry farmed without chemicals, the vineyard sits at the base of Enlightment Mountain, on gravelly volcanic soils, and we are amazed at the concentration and intensity of the fruit from these old vines. Aromatic & intense with classic Chenin Blanc aromas of wet wool, crushed flowers, minerals, beeswax and white pepper. Bone-dry and mineral laden with a kiss of tannin, this is a serious oyster wine.

100% Whole cluster pressed, 50% crushed by foot for overnight skin contact. Fermented in stainless steel, concrete and neutral French oak barrel.s Aged in neutral French Oak Barrels for 11 months.
